What is Yakisoba?

Yakisoba, meaning “Fried noodles” in Japanese, is a popular dish consisting of grilled noodles stir-fried with pork, seasoned vegetables, and Worcestershire sauce.
While the exact origin of Yakisoba is not clear, it has been familiar to people in Asakusa, Tokyo since the pre-war period. It gained popularity as a homemade meal after Chinese noodles became widespread around 1955.

Yakisoba is commonly enjoyed as a snack in beverage stores, as well as a street food or refreshment booth at festivals. It is easy to prepare by cooking on a hot plate, making it a relatively cheap and common food.
Similar to Takoyaki and Okonomiyaki, Yakisoba falls under the category of “B kyuu Gurume,” which refers to second-grade gourmet cuisine in Japanese.

One of the unique aspects of Yakisoba is that it has various local versions known as “Gotouchi Gurume.”
These regional variations add to the appeal of Yakisoba when traveling to different areas in Japan. It is highly popular among locals, but relatively rare to find on restaurant menus, which might seem strange.
One reason for its popularity is the ease of making delicious Yakisoba, as the ingredients can be conveniently purchased at any supermarket or grocery store.
