Embracing Autumn in Japan: A Culinary Journey with Sanma (Pacific Saury)

Sanma

In Japan, the arrival of autumn is synonymous with the season of Sanma, or Pacific saury. This small, silver fish with distinctive blue patterns on its back marks the beginning of autumn and is a beloved culinary treasure in Japan.

How to Savor Sanma?

Sanma can be enjoyed in various ways, with “shioyaki” (salt-grilled) being a common preparation method. This simple technique enhances the fish’s natural flavors, resulting in a crispy, aromatic skin and a delicious taste.

My recommendation is to eat it by topping it with grated daikon radish which is “Daikon Oroshi ” in Japanese,  just as many Japanese do, and then drizzling soy sauce and freshly squeezed kabosu citrus juice over it. It’s very refreshing and delicious, so I highly recommend giving it a try.

Sanma is also a popular sushi topping, and it can be found in sashimi, simmered dishes, and Teriyaki which is also called Kabayaki, offering a wide range of culinary experiences.

The Health Benefits of Sanma

In addition to its delightful taste and cultural significance, Sanma offers numerous health benefits. This oily fish is rich in omega-3 fatty acids, which are known for their heart-healthy properties. Omega-3s can help reduce the risk of cardiovascular diseases, lower inflammation, and support brain health.

Sanma is also an excellent source of essential nutrients like vitamin B12, selenium, and protein. These nutrients play crucial roles in maintaining overall health, boosting immunity, and promoting strong bones.

Why is Sanma a Symbol of Autumn?

Beyond its culinary appeal, Sanma holds a special place in Japanese culture, symbolizing the arrival of autumn. This association with the season is deeply rooted in the fish’s migratory patterns and culinary significance.
During this time, it is readily available in Japanese markets, food stalls, and restaurants, making it an integral part of the autumn experience. Moreover, Sanma is particularly renowned for its exquisite taste during the fall, as it fattens up for its journey, resulting in an oilier and more flavorful flesh that delights the palates of many

For those visiting Japan during the fall, trying Sanma is a must. Its unique flavor and cultural significance provide a delightful way to embrace the essence of autumn in Japan. Enjoying this seasonal delicacy not only satisfies your taste buds but also connects you to the rich traditions of Japanese cuisine.
